Traditionally served over mutton, lamb, or goat, Rogan Josh would more likely be served in America over chicken or beef, or maybe tofu. While not definitive, the name is believed to come from the Persian rawghan meaning “clarified butter” and jōš meaning to “stew” or “boil.”
